Chocolate Protein Peanut Caramel Cups

These decadent, layered cups deliver a dreamy blend of chocolate, peanut, and caramel while sneaking in high-quality protein. They’re a homemade version of your favourite candy, made smarter.

Ingredients

  • 1 Cup of Pitted Dates
  • 1 Cup of Walnuts
  • 1 Scoop of MycoPro Chocolate Protein Powder
  • 1 Tbsp. of Cacao Powder
  • 1/4 Tsp. of Salt
  • 1/2 Cup Peanut Butter
  • 1/4 Cup Maple Syrup
  • 1/2 Can Coconut Milk
  • 100g Dark Chocolate

Directions

Blend dates, walnuts, chocolate protein powder, cacao powder and salt into a dough. Shape the dough into cups (we really recommend silicone moulds for this as they’re easy to pop out) freeze for a couple hours. Warm up your coconut milk until hot but not boiling and pour over the dark chocolate and stir till combined, pour the chocolate ganache into the cup and you’ll notice they instantly firm up, pop back into the freezer and make your peanut caramel, add peanut butter and maple syrup into a bowl and mix till combined. Add the peanut caramel on top of the chocolate ganache and sprinkle with a little salt and you’re ready to dive in!
