A soft, chewy cookie meets the rich, buttery filling of pecan pie in this high-protein, feel-good treat. Perfect for satisfying dessert cravings while fuelling your body.


Ingredients

  • ½ Cup of Oat Flour
  • ½ Cup of Almond Flour
  • 1 Scoop of MycoPro Vanilla Protein Powder
  • ⅛ Cup of Maple Syrup
  • ¼ Cup of Coconut Oil
  • ¼ Cup of Maple Syrup
  • ¼ Vegan Butter
  • ¼ Chopped Pecans
  • 1 Tsp. Cornstarch

Directions

Mix all the dry ingredients till combined add maple syrup and coconut oil, stir until a dough forms. Refrigerate for 30 minutes. Add butter and maple syrup into a saucepan on medium heat once melted together and add in the chopped pecans. Mix cornstarch into a little cold water to make a slurry and add to the pecan mixture to thicken up. Form cookies with the refrigerated dough and use the back of a spoon to carve a circle into each cookie and spoon the pecan mixture. Bake at 180 degrees for 10 - 12 minutes and leave to cool for them to set and enjoy!
